ratatouille

I mean.. can we be honest? Clearly ratatouille is my favorite pixar movie. We’ll ignore the fact tat there is a rat cooking in the kitchen, which would be a hard stop for me. But I love that it takes place in france, and in a kitchen.

So perfect movie; and I happen to have a great ratatouille recipe. You can pretty it up like the picture above, or you can realistically, rustic it up for the perfect side or main dish.

Ingredients:

2 eggplants, sliced and salted

3 zucchinis, sliced and salted

1 large onion, peeled and sliced

4 roma tomatoes, seeded and pureed with salt and pepper

2 bell peppers, stemmed, seed, and sliced

2 cloves of garlic, peeled and minced

1/4 cup evoo

1 tsp salt

1/4 tsp white pepper

2 Tbsp parsley

1/2 cup grated parmesan

Directions:

Preheat oven to 250.

Salt eggplant and zucchini. Let sit for 1 hour, then rinse and pat dry.

In a large sat iron skillet, heat evoo until shimmering. add onions and garlic, stirring and sautéing until softened.

You can fancy layer, per the picture, or just rough chop and add vegetables to the pan.

Top vegetables with tomato puree, and cover with grated parm.

Cooke for 1 - 1 1/2 hours until softened and cooked through.
