creamy coleslaw

I can’t even express how good this coleslaw is.

It’s creamy, but also light and packed full of flavor.

Which means not only will I be eating it on repeat, it’s the perfect warm weather side.

Ingredients:

3/4 cup avocado mayo

3 Tbsp sugar

1 1/2 Tbsp white wine vinegar

1/3 cup avocado oil

1/8 tsp garlic powder

1/8 tsp onion powder

1/8 tsp dry mustard

1/8 tsp celery salt

dash of ground black pepper

juice of 1/2 lemon

1/2 cup crema

1/4 tsp salt

1 head napa cabbage, shredded

1/2 head iceburg lettuce, shredded

1 bunch cilantro leaves, stems discarded

1/3 red onion, thinly sliced

Directions:

In a large bowl, whisk together mayo, sugar, vinegar, oil, garlic powder, onion powder, mustard, celery salt, pepper, lemon juice, cream, and salt.

Once combined add in cabbage, lettuce, cilantro and onion. Toss to coat.

Refrigerate for at least an hour before serving.
