sake tartare

Steak tartare.

Yes, it’s my jam.

And yes we always order it.

And we have some we love more than others.

Like the one from paradisaea. Which is mayo and fish sauce based.

And may or may not have been what I based this off of.

Ingredients:

1 cup minced filet mignon

1 Tbsp kewpie mayo

1 1/2 tsp dijon mustard

1/4 tsp fish sauce

1 tsp sake

1 Tbsp minced green onions

1 egg yolk

1 tsp soy sauce

1/2 tsp sriracha

1 Tbsp pickled red onions

1/4 tsp cilantro oil remnants

cilantro oil

Directions:

Mix together all ingredients except for cilantro oil.

Use a mold to plate tartare.

Drizzle cilantro oil around the outside of molded tartare.
