curtido

Curtido, if you aren’t familiar, is a salvadorian slaw. Served along side puposas, those amazing masa wrapped bundles full of cheese, chicken, beans… you name it.

Think corn tortillas, stuffed and griddled. A crunch wrap without the crunch, or fluff, if you will.

Curtido, is a almost fermented cabbage slaw, that brings a tang to offset all the heaviness from the puposas, and it works perfectly.

Also… it’s pretty darn good on its own.

Ingredients:

1/2 head cabbage, shredded

1/4 large red onion, shredded

2 carrots, thinly grated

3/4 jalepeno, sliced in half almost all the way up, then shredded

1 tsp dried mexican oregano

1/2 tsp salt

1/2 cup apple cider vinegar

1/4 cup warm water

Directions:

Combine and toss all ingredients together.

Refrigerate for 6 hours + before serving. The longer the better.
