thyme studded puff pastry wrapped brie with apricot preserves

Looking for the perfect party starter? A holiday dish to share? A comfy cheese spread perfect for wine and a cozy movie?

Well look no further. This thyme studded puff pastry wrapped brie is topped with apricot spread, and baked until melty and golden brown.

Want to take it up another notch? Drizzle with hot honey, if you don’t have a spice adverse crowd.

Ingredients:

1 sheet puff pastry, thawed according to directions

1 tsp fresh thyme leaves

1 oz wheel of brie

4 Tbsp apricot jam (or use my homemade apricot spread leftover from coffee cake)

1 egg, whisked

hot honey (optional)

Directions:

Preheat oven to 400.

Lay puff pastry over a floured surface.

Sprinkle with thyme leaves.

Roll out a bit.

Center the brie in the middle of the pastry.

Top with apricot.

Bring the pastry up to cover the brie in a circular pattern, until fully covered.

Make a few slices across the top for air to escape.

Brush with the whisked egg.

Bake until pastry is golden brown and cooked through - about 20 minutes (or according to packaging directions).

Drizzle with hot honey if so desire.

Serve with crackers and/or bread.
