pumpkin cheesecake

Need an alternative to pumpkin pie?

Look no further than this pumpkin cheesecakeā€¦ cause seriously? Cheesecake rules.

Ingredients:

2 cups graham cracker crumbs

1/3 cup powdered sugar

8 Tbsp melted butter

16 oz cream cheese, softened

7/8 cup sugar

1 tsp vanilla paste

1/2 tsp salt

1/2 cup sour cream

15 oz pumpkin puree

1/2 tsp pumpkin pie spice

2 eggs

Directions:

Preheat oven to 350.

Hand combine graham cracker crumbs, powdered sugar, and melted butter.

Press into a pie pan until a crust is formed.

Bake for 10 minutes - remove from oven.

Preheat oven to 375.

Whisk together cream cheese, sugar, vanilla, salt, sour cream, puree, and spice.

Once combined add in eggs, and whisk for 5 minutes after each addition.

Pour into crust.

Bake for 40 minutes. Make sure filling is set, and remove from oven and cool before serving.
