easy carnitas 7 layer burrito with roasted green tomato avocado salsa

If you celebrate taco tuesday religiously like we do — then it stands to reason that there will be some tuesday nights where quick and easy needs to be the theme of the night.

That’s where this quick and easy microwavable 7 layer burrito comes into play, thanks to del real.

Carnitas in the microwave? Check. Rice in the microwave? Check? Beans in the microwave? Check, check.

Purchase pre sliced olives? Even easier.

All you need is to combine your salsa ingredients for that pop of freshness and bam. Dinner is ready.

Ingredients:

del real carnitas

del real frijoles

del real arroz

burrito sized tortillas

shredded cheddar cheese

sliced black olives

sour cream

roasted green tomato avocado salsa

28 oz roasted green tomatoes

1 tsp ground black pepper

1/2 jalepeno

1 tsp sugar

2 cloves garlic

juice of 2 limes

buch cilantro, stems removed

1 tsp salt

3 scallions

1 1/2 avocados, rough chopped

Combine all ingredients, besides avocados in a food processor. Add in avocados at the end.

Directions:

Cook carnitas, beans and rice according to directions.

Heat tortillas over open flame or in a cast iron skillet.

Layer tortillas with hot beans, then cheese, then hot rice and hot carnitas. This way the cheese will melt.

Then top with olives, sour cream, and salsa.

Fold into a burrito and serve.
