easy weeknight salsa chicken

Looking for an easy way to get taco tuesday on the table? This salsa chicken is both quick and tasty.

Ingredients:

4 chicken breasts

2 cups of your favorite salsa

3 Tbsp sour cream

1 cup shredded cheddar cheese

4 green onions, light green only

4 Tbsp cilantro, minced

juice of 1 lime

cripsy taco shells, your favorite (I use siete)

sliced olives

avocados, peeled, pitted, and chopped

Directions:

Preheat oven to 425.

Add chicken breasts to an oven safe baking pan. Top with salsa.

Cook for 30 minutes.

Flip chicken over, making sure to spoon salsa over the top.

Cook for 30 more minutes.

Remove chicken from pan, and shred.

Add a couple Tbsp of salsa, sour cream, green onions, cilantro, lime juice, and cheese. Stir to combine.

Stuff chicken mixture into taco shells. Place on baking sheet.

Return to oven for 5 minutes.

Remove and top with olives and avocados.
