red cabbage slaw

I’ve waxed poetic about rimels before. You may have even tried my knockoff green sauce.

They used to have this slaw that was a side option, it was slightly sweet, slightly spicy and 100 percent delish. It was may favorite thing to order along with their grilled chicken sandwich.

This slaw is my shoddy attempt at making it, and while not the same, it’s enough to quell my craving.

Ingredients:

1 red cabbage, thinly shredded

1 1/2 roma tomatoes, halved lengthwise and then thinly sliced

1/2 red onion, thinly sliced

4 oz balsamic vinegar

3 oz avocado oil

pinch of salt and pepper

Directions:

In a large bowl, toss together cabbage, tomato, onion, vinegar, oil, salt and pepper.
