80's chocolate chunk cookies a la mrs fields
Do you remember mrs. fields? It was a cookie store, found mostly in malls, but also online. I’m pretty sure you can still find them online these days, but when they started it was something completely new.
And guys, if you don’t remember. Those cookies were fat. Yes they were phat, but they were also fat as in thick, and full of all the goodies.
And those cookies were amazing. Chocolate chunks, full of flavor, and the only thing we would ask for when shopping at the mall.
These aren’t the same, but they definitely remind me of those times, and those cookies.
Ingredients:
1/2 lb softened, salted butter
1 cup brown sugar
3/4 cup white sugar
2 eggs
1 tsp vanilla
3 cups of flour
1/2 tsp salt
8oz good chocolate, smashed into chunks
Directions:
Preheat oven to 350.
Place parchment on cookie sheets.
In a stand mixer, cream together butter, both sugars, eggs, and vanilla. You want the mixture light in color and combined.
In a separate bowl whisk together flour and salt.
1 cup at a time add whisked flour to creamed mixture and combine. Once all added, beat for 3 - 4 minutes.
Hand stir in chocolate chunks.
Using a large cookie scoop, to place cookies on trays.
Cook for 11 - 15 minutes. Don’t over bake. You want cookies soft, not crispy.
