sweet potato crack
I used to make a baked fry version of these for my kiddos when they were little. They devoured them. Like crack. Thus the name. Even my mom who didn’t think she liked sweet potatoes until she had them, likes them.
They truly are that simple. And that good.
This version is cut in into 1 inch-ish pieces, and roasted, with minimal work. Making a relatively hands free dish, that just needs to be popped in the oven an hour before serving. One less ball to juggle when preparing a large meal.
Ingredients:
3 large sweet potatoes, peeled and cubed in 1 inch-ish pieces
1/2 tsp cinnamon
2 Tbsp honey
4 Tbsp evoo
3/4 tsp salt
Directions:
Preheat oven to 420.
Line a baking tray with parchement paper.
In a bowl, toss together potatoes, cinnamon, honey, evoo, and salt until combined.
Pour onto baking tray.
Bake for 60 minutes. Turning after 30 minutes.
