Here’s a quick and easy way to do both.
These potatoes are combined with leeks, butter and chicken stock, covered and thrown on the grill.
What can be easier than that for your next get-together.
Ingredients:
12 small golden potatoes, quartered
1 cup sliced and washed leeks
8 Tbsp butter, cubed
1 cup chicken stock (can use vegetable if want)
2 cloves of garlic, sliced
1 tsp salt
Directions:
Preheat grill to high.
Toss all ingredients together in a grill safe pan. Cover with tin foil.
Cook on grill surface, shaking often, until potatoes are soft and easily pierced with a fork.
