3 ingredient chopped green salad with spicy sambal dressing

I mean what’s better these days? Quick. Easy. Fresh. No heat cooking?

Not to mention, this salad is absolutely delicious, so there’s that too.

It’s on a regular lunch rotation around here.

Ingredients:

2 cups chopped lettuce

2 cups chopped cucumbers

2 avocados, peeled, pitted and chopped

1/3 cup sambal salad dressing

1 bunch cilantro

1 clove garlic

10 leaves mint

1/2 tsp salt

juice of 6 limes

1/8 cup water

1/4 cup fish sauce

2 tsp sambal

all ingredients combined using processor or immersion blender

Directions:

Toss lettuce, cucumber, and avocados with 1/3 cups of spice sambal dressing.
