it's all greek to me

I mean. If you are looking for a refreshing relish to put atop fish, chicken, etc. Look no further.

Heck. I’d eat this buy itself, on the regular. There is nothing better than fresh summer produce at its finest.

And this greek style “relish” is the perfect vehicle for all this freshness.

Ingredients:

3 heirloom tomatoes, chopped

17 castelvetrano olives, halved

2 Tbsp minced shallots

1 cucumber, peeled and chopped

juice of 1/2 a lemon

handful of italian parsley leaves, rough chopped

2 Tbsp evoo

3/4 tsp salt

Directions:

Add all ingredients to a bowl, and use a spoon to combine ingredients.

Refrigerate at least 1 hour before serving to allow flavors to develop.
