cherry caprese
We are almost at the tail end of cherry season. But before we bid adieu to these little bundles of sweetness, may I suggest trying them as the perfect summer addition to the traditional caprese salad.
Cherries lend themself perfectly to the burrata, tomatoes, basil and balsamic found in this caprese. Trust me, this is one summer salad you don’t want to miss. Bonus, it’s easy.
Ingredients:
8oz burrata
2 roma tomatoes, quartered and sliced
handful fresh cherries, pitted and halved
handful baby basil leaves
evoo
fig balsamic vinegar
maldon salt
Directions:
Plate burrata in center of dish. Spread tomato slices around the outside. Top with cherries and basil.
Drizzle with evoo and vinegar.
Sprinkle salt over the top right before serving.
