grilled salmon and tofu skewers

Nothing like quick and easy grilled skewers. Perfect for poke bowls, rice bowls, snacks, salad toppings, whatever you want.

This particular version uses a poke style marinade and is my fav for make your own poke bowl night.

Ingredients:

1 1/2 cups cubed salmon

1 1/2 cups cubed tofu

1 inch knob ginger, peeled and grated

1/4 cup tangerine juice

1/8 cup coconut aminos

1 tsp fish sauce

1/4 cup rice vinegar

1/8 cup sesame oil

Directions:

Whisk together ginger, juice, aminos, fish sauce, vinegar and oil.

Place cubed salmon and tofu in two separate ziploc bags. Pour half marinade into each bag.

Let marinate in fridge for an hour before grilling.

Heat grill to medium high heat.

Grill for just 1-2 minutes per side, only enough to get grill marks and sear the outside. Remove to top self for another 2 minutes, covered.

Let rest for 5 minutes before serving.
