corn salsa
I’m loving all the fall corn right now. It’s so sweet and delicious. And, what’s even better than fresh corn?
Fresh corn salsa, that’s what.
Ingredients:
3 cobs of corn, kernels stripped
1 bunch cilantro, stems removed, leaves rough chopped
1/2 shallot minced
juice of 2 limes
1/2 jalapeño, minced
1/2 tsp salt
1/2 tsp black pepper
Directions:
Bring a large pot of water to boil. Once boiling, add the corn kernels. Blanch for 3 - 5 minutes, until just tender, but still vibrant. Remove from water and add to an ice bath to stop cooking.
In a medium sized bowl, combine all ingredients.
