tofu lo mein

Looking for a perfect side for your chinese take-out at-home menu? This tofu lo mein is sure to impress.

Even the kiddo’s around here love it. It’s also a perfect meatless monday edition.

Ingredients:

10 oz lo mein noodles, cooked according to package instructions

2 Tbsp avocado oil

2 Tbsp sesame oil

1/2 onion, peeled and thinly sliced

3 carrots, peeled and sliced

1/2 bunch cilantro leaves, rough chopped

6 oz tofu

2 garlic cloves, thinly sliced

4 Tbsp butter

4 Tbsp soy sauce

Directions:

In a large wok or saucepan bring avocado oil and sesame oil to just shimmering, over medium high heat.

Add onions, and sauté until slightly softened.

Add carrots and continue to sauté. Once carrots have slightly softened, add tofu.

Stir to combine and continue to sauté for about 5 minutes, stirring occasionally.

Add lo mein, garlic, butter and soy sauce. Stir to combine.

Let sauté until butter has melted, garlic has softened, and soy sauce is warmed.

Remove from heat and serve.
