corn chowder salad
Are we over corn yet?!?
Nope. Didn’t think so. There’s no bbq or holiday situation where corn in one form or another is found to be unwelcome.
And, now that I’ve created the most perfect warm, grilled corn salad, with all the flavors of a fall or winter corn chowder, there’s even more reasons to celebrate.
Ingredients:
4 ears of corn
2 Tbsp evoo
1 tsp salt
1/2 tsp salt
1 tbsp ghee
2 oz goat cheese
1 tbsp diced scallion
2 slices of cooked bacon, chopped
Directions:
Preheat grill on high.
Shuck corn, and rub with evoo and 1 tsp salt.
Grill corn on high for 10 minutes, until grill marks appear, but before burned, rotating every few minutes.
Remove corn kernels from the cob.
Add kernels into a large bowl with all other ingredients, stir to combine and serve while still warm.
