quick tip: breakfast for dinner

Do you constantly find yourself in a dinner rut? Or you know what you’d like to have for dinner, but your kids complain that they don’t like it, they eat it too much, they aren’t in the mood, it’s no longer their favorite, etc.

Happens all the time.

The easiest fix for this I have found; and also a continually requested meal, is to make breakfast for dinner. When the kiddos were all younger, we always made breakfast for dinner on mondays. I’d make extra, and it would serve as enough leftovers for the rest of the school week. As the kiddos got older, and became autonomous when it came to making their own breakfasts in the morning, I no longer needed the leftovers, but I continued breakfast for dinner as part of our regular dinner rotation.

What’s great about this meal, is the variety of options. Just like taco tuesday, there are countless ways to have breakfast for dinner. Some of our favorites are a bagel and lox bar, make your own omelets, waffles with bacon and fruit, frittatas, scrambled eggs and sausage, pancakes, and breakfast burritos or tacos (which also work for taco tuesday).
