quick-pickled cucumber salad
I love a good pickled cucumber salad. It’s perfect all by itself, or served on top of or next to any number of lettuce wrap or asian tacos.
And, bonus? It’s super easy to make.
Ingredients:
1 shallot, thinly sliced
1 english cucumber, or 2 - 3 persian cucumbers, peeled, halved, seeded, and sliced
1/4 cup rice wine vinegar
1/8 cup water
1 tsp sugar
1 tsp salt
Directions:
Whisk together vinegar, water, salt and sugar. Toss with sliced shallots and cucumbers. Let sit for at least 1 - 2 hours before serving.
