pan roasted salsa verde

Another taco tuesday, another salsa for your enjoyment.

This one is one of my very favorites… a pan roasted salsa verde.

Ingredients:

6 tomatillos, husked and quartered

5 green onions, roots and tops removed

3 garlic cloves, with peel

1/4 jalapeño

1 tsp salt

bunch of cilantro

juice of two limes

Directions:

Preheat a cast iron skillet to medium high heat.

Place tomatillos, onions, garlic cloves, and jalapeño directly onto hot skillet.

Turn until blistered on all sides.

Add roasted ingredients to a blender, add lime juice, salt and cilantro. Blend until combined.

Chill before serving.
