back-to-school lunch series: grilled ham and cheese and tomato soup
How in the world has summer flown by this fast? How are we already facing down school? I know some kids have already gone back, and mine start this week.
I’m constantly being asked what I make on a regular basis for school lunches, so I decided to go back in my photo archives and see what some of our fav’s were and hopefully give a little inspo to everyone else out there.
The key for me, was utilizing dinner leftovers, with a few additions and putting lunches together while making and cleaning up dinner. Also, always making sure that there were lots of choices, and changing up certain ingredients for personal preferences. The bonus being that the hubs could often grab a lunch to go for himself as well.
This particular lunch was a regular favorite. Leftover grilled cheese and ham, tomato soup (which, since it was served cold was now termed “gazpacho”), sliced cucumbers or carrots, and sliced mangos or melons.
