caesar dressing

If you have access to really fresh eggs, garlic and really good lemons, you basically have the perfect combination for caesar salad dressing. All the rest comes out of the pantry… but if you don’t have a good source for your fresh ingredients, you will notice the difference.

Ingredients:

2 egg yolks

1/3 cup evoo

2 Tbsp white wine vinegar

juice of 1 lime

1 1/2 tsp anchovy paste

1 tsp dijon mustard

1/2 tsp worchestershire

2 cloves of garlic, smashed

1/2 tsp black pepper

1 tsp salt

Directions:

In a glass mason jar, or similar, add egg yolks, lemon juice, vinegar, dijon, anchovy paste, garlic, black pepper, 1 tsp salt, and worcestershire. Use an immersion blender to combine all dressing ingredients.
