garlicky sautéed spinach
This is my favorite way to eat cooked spinach. Period.
Ingredients:
9 oz spinach, washed and dried
4 cloves of garlic, minced
2 Tbsp evoo
Directions:
Heat a cast iron pan to medium heat. Add evoo, and warm until just shimmering. Add in spinach, tossing to coat with oil.
Cook for about 5 minutes, until spinach is wilted. Add in garlic and toss with spinach leaves. Cook for an additional 3 - 5 minutes until garlic is cooked through.
