quick tip: tiktok pasta hack
I’m not a tiktok subscriber. Haven’t been on it. Ever. (I don’t even know if tik tok is one word or two)?
However, I have seen all the videos from tiktok depicting a new pasta hack method; and since it’s me, and it involves food, I had to try it.
The hack involves baking tomatoes and a block of feta cheese tossed in evoo in the oven for about 20 minutes, then dumping in some cooked pasta and mixing it all up together.
I don’t like feta, and I like more flavor in my pasta, so I had to change it up a little. Here’s what I did.
Ingredients:
2 rounds of boursin herb and fine cheese
2 cups of heirloom cherry tomatoes
1/2 cup artichoke quarters
1/2 cup castelvetrano olives
4 garlic cloves, peel on
1 tsp salt
2 Tbsp evoo
package of penne pasta, cooked
1/4 cup reserved pasta cooking water
optional: 1 1/2 cups of premade tomato sauce… if you want to ramp up the marinara flavor
Directions:
Preheat oven to 425.
In a deep baking dish, toss tomatoes, olives, artichokes, and garlic cloves (peel on) in salt and evoo. Set two cheese rounds in the middle, drizzling some evoo over the top as well.
Bake in oven for 20-30 minutes. Cheese should be melted, tomatoes should be bursting, and garlic should be soft.
Remove from oven. Remove peels from garlic cloves and smash insides, returning to dish. Stir to combine melted cheese and veggies. (Add tomato sauce at this point if you so desire).
Add cooked pasta and reserved cooking liquid to the dish, and toss to coat.
Serve.
