island fries
I know, we talk about my kids weird food preferences all the time. Weird in the sense only that they have refined palates in many ways, but also random food dislikes.
In this case, I have a kid who hates french fries, and another one who hates bacon. See why I said weird?
And yet, both of these kiddos would devour cheddar cheese fries smothered in bacon and scallions from islands restaurant. All four of the kiddos loved them so much. But then the islands’ near us closed. And the cheese fries we love all went away.
So what’s a home cook to do, but to create their own knock-off version.
Ingredients:
5 russet potatoes, peeled and cut with a crinkle cutter
1 tsp salt
3 Tbsp evoo
2 cups shredded cheddar cheese (shred your own please)
1 pack bacon, cooked and crumbled
1 bunch green onions, sliced
ranch for dipping, homemade or store bought
Directions:
Preheat oven to 450.
Preheat air fryer to 400.
Prepare a large bowl of ice water. As you cut the potatoes, place them in the cold water.
Drain water and pat off potatoes. Toss with evoo and salt. Add to air fryer. Toss every 5 minutes. Cook for approximately 20 minutes or until golden.
Pour out cooked fries onto parchment lined oven safe pan. Top with cheese, then bacon. Cook for 5 -10 minutes, until cheese has melted. Top with onions, and serve with ranch.
