meatloaf meatballs

You’ve hear this before… 2 of my kids won’t eat meatloaf. But they will eat meatballs. As will the other two.

And, this particular meatball recipe is based of a meatloaf recipe my dad used to make, that he turned in to the most wonderful meatloaf sandwiches. So good.

And, I’ll tell you that when one of my meatloaf loving kiddos tasted it, his comment was, “this tastes just like costco meatloaf.” Which really was the best sort of compliment he could have given me, especially since I can guarantee, that these meatloaf meatballs have a lot less crap in them than the costco ones do, to make them tasty.

Ingredients:

1 lb ground sirloin

1 lb ground beef

1 cup pork panko

3 Tbsp yellow mustard

3 Tbsp ketchup

2 Tbsp brown sugar

2 eggs

1 tsp salt

1/4 tsp pepper

1 tsp onion salt

1/2 tsp celery salt

1/2 tsp thyme

Directions:

Preheat oven to 450.

In a large bowl, combine all ingredients by hand until mixed. Using a cookie scoop, create individual meatballs and place on an oven safe, tin foil lined tray.

Cook on the bottom shelf for 10 minutes.

Switch to top shelf for an additional 10 minutes.

Remove from the oven.

I suggest serving over mashed potatoes, and topping with ketchup.
