pan fried cod

Sometimes you just really want a simply done and tasty piece of fish.

This pan fried cod takes your simple fish to the next level, by topping it with checca, without sacrificing its simplicity or ease to make.

Ingredients:

avocado oil, enough to coat pan 1/8 inch from the bottom or a large cast iron pan

6 4-5oz portions of cod, patted dry

1/2 tsp salt

1/2 tsp onion salt

1/4 tsp ground black pepper

Directions:

Heat avocado oil on medium heat.

Mix salt, onion salt and pepper together. Sprinkle over both sides of fish.

Carefully lay pieces of cod in oil. Cook until slightly browned, about 4 minutes per side.

Remove from heat.

Plate, and top with a generous spoonful or two of checca.
