lettuce wrapped pork egg rolls
I have a confession…
I am obsessed with wrapping anything in lettuce and loving it. Also a confession. I love lettuce. So much that I often have a salad of just lettuce. (True story).

It’s not about being healthy. I actually prefer my tacos in lettuce wraps, my burgers protein style, and my sandwiches rolled in lettuce. I choose lettuce.
So, I got to thinking about actual asian lettuce wraps; and other sorts of asian appetizers I enjoy, which lead me to create these lettuce wrapped pork egg rolls.
Pair with my epic sweet and sour sauce, use a premade marinade, and you’ve got yourself a quick and easy weeknight dinner that’s sure to be a hit. And, if you’re like me? You feed your lettuce addiction along the way.
Ingredients:
2-3 Tbsp avocado oil
1 lb ground pork
3 carrots, shredded
1 bunch cilantro, chopped
1/2 white onion, diced
1 Tbsp sliced green onions
1 can palmini hearts of palm linguini, rough chopped
1 bottle of primal kitchen sesame ginger dressing/marinade
1 head butter lettuce, leaves removed intact for “cups”
Directions:
Use just enough avocado oil to coat the bottom of a heavy sauce pan. Heat on high until just shimmery. Add ground pork, and sauté until browned. Remove from pan.
Add vegetables to pan, and sauté until just softened, picking up all the brown bits left from the pork. Add pork back into the pan, and add marinade. Stir until all combined. Let sauté an addition 3-5 minutes.
Serve with lettuce cups (and sweet and sour sauce).
