roasted garlic aioli

Ingredients:

1 egg

3/4 cup avocado oil

1 tsp dijon mustard

1 lemon, divided use

1 tsp salt

1/4 cup melted ghee

4 large garlic cloves

4 sprigs of fresh thyme

Directions:

Set an egg in warm water, for approximately 5 minutes. This not only brings the egg to room temperature, but also heats it enough, that I feel more comfortable using it.

Crack warmed egg into 2 cup mason jar and 1 tsp Dijon, juice of 1/2 a lemon, evoo and salt. Using an immersion blender, combine into a thick mayo.

Once thick, add the melted ghee, roasted garlic cloves, thyme leaves, and remaining 1/2 lemon juice.
