roasted tomato pizza sauce
If you are looking to have an at home pizza night, a must, after homemade dough, is homemade pizza sauce. This roasted sauce is not only supper easy, but the flavor kicks it up from just pizza sauce to excellent pizza sauce.
Ingredients:
8 roma tomatoes, quartered
4 cloves of garlic, peeled and smashed
12 tiny basil leaves (I used the tops of my basil plants I headed to stop them from seeding)
6 large basil leaves, chiffonade
1 tsp dried oregano
evoo
salt and pepper to taste
Directions:
Preheat oven to 450. In a parchment lined jelly roll pan, toss tomatoes, tiny basil, and garlic in enough olive oil to coat. Salt and pepper.
Roast for 30-40 minutes, until tomatoes just start to brown. Empty tomatoes, basil, garlic, and juice into a bowl. Add fresh basil and dried oregano. Using an immersion blender, purée. Set sauce aside to use immediately, refrigerate for 3-5 days, or freeze for future use.
